Baked Tomatillo Chicken

This delicious and famous Mexican recipe is made by combining tomatillos, which are like little green tomatoes with a more savory flavor, with cilantro, chili, and other flavorings to make a spicy sauce, which is beautiful with the chicken drumsticks. Baked tomatillo chicken is a quick and easy Mexican recipe to make and if you like Mexican food you will love this because it is one of the more traditional Mexican recipes and the flavors are amazing.

Chicken is often used in Mexican recipes and you might have tried chicken tacos, chicken fajitas, a Mexican chicken casserole recipe, or something else like that. The soft, versatile flavor of chicken also goes perfectly with the tomatillo flavor and with the other spices and seasonings used in this baked tomatillo chicken recipe.

This baked tomatillo chicken is usually served with boiled potatoes but you could serve it with rice if you prefer, or mashed potatoes. French fries are not exactly Mexican but they would also be good with this full flavored sauce. Baked tomatillo chicken is a nice dish for anything from a relaxed family supper to a dinner party. This is a nice looking dish and it smells and tastes very good.

Chicken in Spicy Tomatillo Sauce

Ingredients -

8 chicken drumsticks
1 lb tomatillos, husks removed
3 tablespoons vegetable oil
2 tablespoons chopped cilantro
1 peeled clove garlic
½ sliced white onion
8 potatoes
¼ teaspoon white sugar
1 chopped jalapeno
Salt and black pepper

Preparation:

Preheat the oven to 425 degrees F.

Toss the chicken with 1 tablespoon of the oil and some salt and pepper on a baking sheet, then bake it until cooked through and golden brown.

This will take about 40 minutes.

Put the tomatillos in a pan and add just enough water to cover them.

Bring them to a boil, and then simmer for 5 minutes or until tender.

Transfer the tomatillos to a food processer with a slotted spoon.

Reserve ⅓ of the tomatillo cooking water.

Puree the tomatillos with the sugar, garlic, onion, and jalapeno.

Chop the potatoes and boil them until soft.

Heat the rest of the oil in a skillet and add the tomatillo puree.

Cook the mixture over a moderately high heat for 10 minutes.

Stir in half the cilantro and the reserved cooking liquid.

Serve the potatoes with the chicken, tomatillo sauce and the remaining cilantro.
