Grilled Steak Fajitas

Steak fajitas are very popular in Mexico and there are various ways to make steak fajitas recipes. Grilled fajitas taste very good and are great to make on warm summer evenings when everyone is outside. The steak in this grilled fajitas recipe is marinated in vinegar, lime juice and cayenne to make it tasty and give it a hint of citrus.

The bell peppers and onion are found in all authentic Mexican fajitas recipes and the cheese, salsa, sour cream, and guacamole are traditional Mexican garnishes for this kind of dish. Some people put all the fillings into their steak fajitas before serving but you can serve the sour cream and guacamole on the side, like in this recipe, so people can help themselves. It is up to you how you serve them. If you are catering for a buffet or party, it is often nice to lay out the garnishes and fillings and let people make their own fajitas.

This is a very simple recipe to follow so if you are new to making Mexican recipes, and fajitas in particular, you might want to start off with this one because you will not have any problems and you will enjoy the results of this skirt steak fajitas recipe.

How to Make Steak Fajitas

Ingredients -

½ cup lime juice
¼ cup white vinegar
1 lb flank or round steak, in ¼ inch strips
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 onion, cut into rings
12 flour tortillas
1 cup shredded Monterey Jack cheese
1 teaspoon cayenne
1 teaspoon salt
1 teaspoon black pepper
Salsa, sour cream and guacamole to serve

Preparation:

Combine the vinegar, lime juice, cayenne, salt and black pepper in a bowl. Marinate the steak in this mixture for 20 minutes.

Preheat the grill to medium.

Put a couple of drops of water on each tortilla and wrap them all together in tinfoil. Place them on the grills, turning once during the cooking time. Place the steak in a grilling basket over a high heat.

Turn down the heat before adding the onion and bell peppers. Cook until the meat is done to your liking and the peppers begin to soften.

Remove everything from the grill, fill each tortilla wrap with the steak mixture, some salsa and cheese and roll up, with the seam underneath.

Serve with sour cream and guacamole.
