Savory Carne Asada Fajitas with Peppers

Steak: other than vegetarians and those who eschew it for religious reasons, there is hardly anyone who does not love it, especially when it is hot off the grill. In fact, just about the only thing that can make steak any better is preparing it in the style of this steak fajitas recipe.

It does not get a whole lot better or easier than this recipe. Skirt steak or flank steak is marinated in lime juice, olive oil, garlic and spices and served on warm tortillas with a few simple toppings for a dish which hits the spot every time.

If you are a fan of steak and really, with few exceptions, who is not, then this is a recipe which you simply have to try. It is incredibly easy, since you only need to spend a few minutes in the kitchen to prepare the steak and vegetables and to sauté the onions and peppers - the rest of the process is just grilling the steak and of course, enjoying the fruits of your labors!

Flank Steak Fajitas

Ingredients -

3 Tbsp vegetable oil
1 lb of flank steak or skirt steak
1 large white or yellow onion, cut into strips
2-3 bell peppers, sliced lengthwise into strips
Salt and black pepper, to taste
Juice of 3 limes
2 cloves garlic, minced or pressed
˝ tsp cumin
1 bunch cilantro, chopped
Large flour tortillas
Lime wedges and salsa, for serving

Preparation:

Marinate the steak in 2 tbsp olive oil, lime juice, minced garlic, cumin and salt and black pepper for at least one hour or refrigerated overnight. Grill the steak to desired doneness and slice into thin strips.

v Cut the onion and peppers into strips and sauté in 1 tbsp olive oil until tender over medium-high heat. Serve the steak, onions, peppers, and tortillas hot, along with salsa, chopped cilantro, and lime wedges.
