One of the Best Grilled Chicken Fajitas Recipe

Fajitas are one of the most popular of Mexican (and for that matter, Tex-Mex) dishes on the northern side of the Rio Grande. They have gone from being a relatively obscure dish which was a traditional meal for vaqueros (cowboys), usually made with skirt steak, to a favorite in Mexico and abroad.

However, as fajitas have become more popular, varieties other than the traditional skirt steak or flank steak have come around, with one of the most popular being chicken. Chicken has the advantage of being less expensive than steak as well as being almost universally popular - and of course, as anyone who has ever had a chicken fajita knows, they make a great fajita as well.

This recipe sticks close to the classic fajita recipe, simply substituting grilled chicken for grilled steak. Just like the traditional version, it is served with tortillas, sautéed peppers and onions and condiments like cilantro and lime wedges on the side. It is easy to make and it is a truly satisfying meal.

Fajitas De Pollo

Ingredients -

1 lb skinless, boneless chicken breasts, grilled and shredded
8 fajita-size flour tortillas
1 green bell pepper, sliced into thin strips
1 yellow or white onion, sliced thin
1 tsp chili powder
2 tbsp cilantro, chopped
Juice of 1 lime
1 jalapeno, diced
Salt and black pepper, to taste
Chopped cilantro, lime wedges and salsa, for serving

Preparation:

The best way to do this is to prepare everything right after the chicken comes off of the grill (if you like, you can marinate the chicken overnight in lime juice, minced jalapeno and garlic, cilantro, salt and pepper and olive oil before grilling).

While the chicken cools, sauté the pepper and onions and set aside.

Once it is cool enough to handle, shred the chicken with a fork and sauté with chili powder, cilantro, and jalapeno, along with the lime juice.

Once it has heated through and mixed well with the spices, serve at once along with the tortillas, peppers, onions and some salsa, cilantro, and lime wedges on the side.
