The word "tampiquena" refers to a Mexican style of cooking steak. This recipe originated from the Tampico Club in 1939 and is still a very popular recipe today. You can compare this tampiquena recipe to a very up-market cheeseburger in the broadest sense of the word, since it is basically a melted cheese-topped steak. Of course, there is more to this recipe than that. The steak is seasoned with seasoning salt and broiled with a tomato, onion, and garlic topping. Then the cheese is added and the steak is broiled until all the ingredients are hot and juicy and the meat is cooked to perfection.
This dish is quite a simple concept but the chilies add a lively flavor and the other ingredients are wonderful with the meat. You can serve this steak tampiquena recipe however you like. Sour cream, salsa, tortilla chips, and French fries would go nicely, or you can serve it with boiled potatoes and a green salad if you prefer.
This is a very quick recipe to make, since a thin slice of steak will be done in under ten minutes and you can make the tomato, onion and garlic sauce while the first side of the steak is broiling. Choose a good quality cut of steak for this, because you are going to broil it. Save your flank steak and skirt steak for Mexican casserole recipes or anything with a long, slow cooking time.
Ingredients -
3 thinly sliced quality cuts of steak
8 oz canned whole roasted green chilies
3 slices white Mexican blend cheese or Monterey Jack pepper cheese, sliced lengthwise
1 minced yellow onion
2 chopped cloves garlic
2 peeled, chopped Roma tomatoes
1 tablespoon olive oil
Seasoning salt, as needed
French fries, mole sauce, guacamole, sour cream, and tortilla chips, to serve
Preparation:
Cut the green chili peppers into long strips.
Heat the oil in a skillet.
Sauté the garlic, tomato and onion for 3 minutes.
Preheat the broiler.
Sprinkle seasoning salt over both sides of the steak and broil for 3 minutes on 1 side.
Put some of the tomato, garlic, and onion mixture on the unbroiled side of the steaks and top with the green chili strips.
Put a cheese slice on top of each steak and broil for 3 minutes or until the cheese is melted and the steak is cooked through.
Serve with the guacamole, French fries, mole sauce, sour cream and tortilla chips, or with your favorite Mexican side dish recipes.
