Spicy Prawns with Chili

If you are like a lot of people, prawns are something you may not be familiar with. However, you probably are familiar with their close relatives, shrimp - or you may have even had prawn before without knowing the difference!

In terms of taste and preparation, there is little distinction between the two, so if you don't happen to have fresh, high quality prawns available in your area, shrimp will do perfectly well as a replacement in this spicy prawns with baby spinach recipe, so go ahead and substitute.

This is a spicy prawn or shrimp recipe which also features spinach, which is one of the most popular vegetables in Mexican cuisine. Not everyone on this side of the Rio Grande is aware of how common spinach is in Mexican cooking and you certainly will not find it on the menus of popular Mexican-style fast food chains, but it is featured in many Mexican dishes. This recipe is just one of many wonderful examples of just how well this humble leaf vegetable blends with the spicy, savory flavors of Mexican cuisine - and paired with prawns, it is simply irresistible.

Spicy Prawns with Spinach

Ingredients -

2 lbs shrimp, peeled and deveined
1 lb spinach leaves, washed (prewashed baby spinach is most convenient)
4 cloves garlic, crushed
2 - 4 Serrano peppers, sliced into thin rings (adjust quantity to taste)
Zest and juice of 2 limes
2 tbsp vegetable oil
Salt and black pepper, to taste
Lime wedges, for serving

Preparation:

Heat the oil in a skillet over medium-high heat and begin cooking the prawns (about 3 minutes per side or until totally opaque - though many cooks prefer to cook them a little longer to get a bit of a sear on the prawns).

After turning the prawns, add the crushed garlic,

Serrano peppers, and spinach and continue to cook, stirring occasionally until the Serranos are tender, the prawns are thoroughly cooked, and the spinach is wilted.

Toss with the zest and juice of 2 limes, season to taste with salt and black pepper and serve hot with lime wedges on the side.
