This Mexican torte recipe contains flour tortillas but, rather than being filled and baked, they are smothered in layers of cheese, onion, sausage and more. So, what is a torte? Well, a torte is usually a sweet dish and is made in various layers. Do not confuse Mexican torte with Mexican torta. A torta is a Mexican sandwich, which gained popularity outside Mexico after world war two.
This torte recipe uses the same layering technique to add interest and visual appeal. This torte recipe is rather pizza-like but uses flour tortillas rather than dough for the base. The sausages, garlic, onion, and cheese blend together wonderfully. For something Mexican but a little bit different, this is an excellent Mexican food recipe to try out
As with most Mexican recipes, you can alter the amount of chilies to make it more or less spicy. The sausage, onion, cheese, and garlic are all strong flavored so using at least a little chili is a great way to spice up these delicious flavors and blend everything together. You can use chorizo instead of sausages if you like.
Ingredients -
2 onions, chopped
½ lb spicy Italian sausage links
4 oz can chopped green chilies, drained
16 oz can roasted red peppers, drained
8 flour tortillas
2 cloves garlic, finely chopped
8 oz shredded Monterey Jack cheese
Salsa, sour cream, and guacamole (optional)
Preparation:
Preheat the oven to 400 degrees F.
Remove the sausage meat from the casings and cut them into ¼ inch slices.
Cook the sausage, garlic, and onions in a skillet over a medium heat, stirring now and then, until the sausage is browned.
Drain off the fat.
Stir in the chilies.
Grease a pie place and put 2 tortillas on it.
Spread with half the sausage mixture and half the cheese.
Put 2 more tortillas on top. Spread with the rest of the sausage mixture and the rest of the cheese.
Cover and bake for 40 minutes.
Take the cover off and bake for another 15 minutes or until the center is hot and the cheese melts.
Let the torte cool for 10 minutes, then cut it into wedges and serve with salsa, sour cream, and guacamole.
