Prawn aren't quite as well known as their relative the shrimp, at least in most of the United States, but they are very much so elsewhere and are nonetheless somewhat popular on tables both here and in other parts of the world. While many people think of shrimp and prawns as identical (and for culinary purposes, they may be substituted for one another), they are actually two distinct species of crustacean.
Just in case you're curious about whether what's on offer at your local seafood market is shrimp or prawn, take a close look at their legs - shrimp usually have two pairs of claws, while prawns normally have three. At least for this recipe, that is as far as we are going to go into the differences between these two animals, since there is one very important similarity which is more important for our purposes: namely, they both taste great grilled.
This Mexican style grilled prawns recipe involves marinating prawns (or shrimp, if that is what you have on hand) in lime juice, oil, peppers and spices before grilling them to perfection. Actually, that is all you really need to know here - whether you are grilling shrimp or prawn, they are going to disappear fast.
Ingredients -
2 ½ lbs prawns (or shrimp), peeled and deveined
½ cup olive oil
Juice and zest of 6 limes
⅓ cup cilantro, chopped
2 jalapeno peppers, minced
4 cloves garlic, minced
1 tsp paprika
2 tsp cumin
2 tsp dried, crushed ancho chili
Salt and black pepper, to taste
Wooden skewers for grilling
Lime wedges, for serving
Preparation:
Zest and juice the limes and add to a large ceramic or plastic bowl (many types of metal bowl will react with the acidity of the lime juice), along with the prawns, garlic, peppers, cilantro, olive oil and spices.
Cover and refrigerate; allow to marinate at least 4 hours and preferably overnight.
Skewer the prawns and grill for about 3 minutes per side or to desired doneness (but at least until the prawns are opaque).
Serve hot with lime wedges and the side dishes and condiments of your choice.
