A Mouthwateringly Good Recipe for Mexican Pizza

If you cannot decide what to make for dinner and you are torn between Mexican food and a pizza, what about combining these two options to make a Mexican pizza recipe? Pizza might be Italian but using Mexican ingredients for the topping gives it a wonderful flavor. You can use tortillas rather than a pizza crust in some Mexican pizza recipes but in the following recipes you can use some readymade pizza dough. All the flavor is going to be in the wonderful toppings.

This is a spicy pizza and the combination of poblano and chipotle chilies really spices up the ham, cheese, tomatillo, and onion topping. If you usually order a ham and cheese pizza, you will love the way the spices bring the flavor to life and the tomatillo flavor makes a nice change from the tomato taste you might be more familiar with.

The pumpkinseed and cilantro topping also looks good on this Mexican pizza recipe, although you can leave these off if you do not happen to have them. This is a great pizza to make if you like authentic Mexican recipes because all the toppings are used in many traditional Mexican recipes and the queso fresco, tomatillos, chilies and other Mexican ingredients combine beautifully, the way they do in lots of well loved Mexican food recipes.

Queso Fresco Mexican Pizza with Chilies and Ham

Ingredients -

1 lb readymade pizza dough
8 oz chopped, cooked ham
Cooking spray, as needed
½ teaspoon salt
1 tablespoon cornmeal
7 oz can chipotle chilies in adobo sauce
¼ teaspoon black pepper
1 red onion, in ¼ in thick slices
2 oz crumbled queso fresco
2 oz grated cheddar cheese
1 tablespoon toasted, unsalted pumpkinseed kernels
¼ lb chopped tomatillos
2 tablespoons chopped cilantro

Preparation:

Preheat the oven to 450 degrees F.

Roll the pizza dough out on a floured board to make a 12 inch circle, then transfer it to a baking sheet or pizza pan coated with cooking spray and sprinkled with a tablespoon of cornmeal.

Shape the outer edge of the crust into a lip.

Separate the onion slices into rings and spray them with cooking spray.

Sprinkle ¼ teaspoon salt and ⅛ teaspoon black pepper over them, and then toss to coat.

Bake the onion on a cooking spray-coated jelly roll pan for 15 minutes, stirring them halfway through the cooking time.

Preheat the broiler.

Put the poblano chili on a baking sheet lined with aluminum foil, then broil for 8 minutes, about 3 inches from the heat, or until the chili is charred and black all over.

Put it in a plastic bag and leave it to steam for 15 minutes.

Peel the chili, then cut a lengthwise slit in it to remove the steam and seeds.

Cut the chili into strips and sprinkle ¼ teaspoon salt and ⅛ teaspoon black pepper over them.

Turn the oven up to 500 degrees F.

Add the chipotles to a blender or food processor and process them until smooth.

Spread half a tablespoon of this puree over the pizza crust.

You will have some left over for another use.

Arrange the chili strips over the chipotle puree, then top with the ham, onions, and tomatillos.

Scatter the cheddar and queso fresco over the top.

Bake the pizza for 17 minutes or until the crust is golden brown and the cheese is melted.

Sprinkled the pumpkinseeds and cilantro over the Mexican pizza and serve hot.
