Chicken is a common ingredient in traditional Mexican food. In this Mexican inspired recipe, tomato, bell pepper, and corn are used, as well as lime juice and other ingredients. The chicken is combined with the salsa and then grilled or broiled and served with the salsa.
This Mexican recipe for chicken breast with mango salsa is good served with fluffy, white rice or sautéed potatoes. This is a very healthy recipe and is virtually fat free. You can also serve a helping of broccoli on the side for added goodness. Ingredients -
4 skinless, boneless chicken breast halves
1 ½ cups mango salsa
3 tablespoons finely chopped scallion
2 tablespoons chopped fresh cilantro
⅔ cup frozen corn kernels, defrosted
2 tablespoons salt-free tomato paste
2 tablespoons fresh lime juice
1 green bell pepper, cut into thin strips
Preparation:
Prepare the grill or preheat the broiler.
Combine ½ cup of the mango salsa with the tomato paste.
Add the chicken and stir to coat. Combine the rest of the salsa with the corn, scallion, bell pepper, cilantro and lime juice in another bowl.
Grill or broil the chicken for about 4 minutes per side, 4 inches from the heat, or until it is cooked through.
Serve it with the mango salsa on the side.
