Summer is almost synonymous with grilling. When the world thaws out from winter's frosts and the temperatures climb to the point where being outside becomes pleasant, the grilling season begins - and of course, it is during the warmest months of the year that the average barbecue grill sees the most use.
When it comes to grilling, chicken is a perennially popular choice, especially in the form of kabobs. There is almost nothing easier than putting together some skewers of chicken and vegetables and throwing them on the grill; and of course, there are few of summer's many rewards which can compare with a plate of perfectly grilled chicken and vegetable kabobs.
This recipe adds one little twist to the basic grilled chicken kabob format: serving the grilled chicken and vegetables on a bed of quinoa. Quinoa and chicken go together wonderfully and especially when you use freshly grilled chicken and veggies, it is hard to beat. Just throw it together and add a little salt and pepper and lemon or lime and you are good to go. Great meals do not come too much easier than this chicken and quinoa recipe one.
Ingredients -
1 lb chicken, cut into small pieces
2 small or 1 medium zucchini, cut into ¼ " thick coins
1 large yellow onion, chopped into large pieces
2 green, yellow or red bell peppers, chopped
8-10 button or crimini mushrooms, washed
Lemon or lime juice, to taste
1 cup cooked quinoa
2 tbsp olive oil
Salt and pepper, to taste
Bamboo skewers
Preparation:
Cook your quinoa while the grill is getting hot enough to begin grilling your kabobs; this will also give you plenty of time to prepare your kebabs. Brush each kabob with a little olive oil and set on a tray to take out to the grill while the quinoa finishes cooking. Once the quinoa is done, fluff with a fork, season to taste and cover. Now it is time to grill. Turn the kabobs every 1-2 minutes to prevent grilling and cook until the chicken is cooked through and the vegetables become soft and blacken slightly. Remove from the grill with tongs and serve on plates with a bed of quinoa with lemon or lime wedges and enjoy.
