Mexican Ceviche with Passion Fruit and Mango

This tangy dish is scented with citrus and hot peppers to give a true taste of Mexico. You can get rocoto, which is a round red or orange chili pepper, and aji amarillo, which is a yellow chili pepper with a hot, fruity flavor, in Latin American stores. If you cannot find these, you can substitute hot pepper sauce.

It is best to use sashimi grade tuna in this Mexican food recipe because it is going to be served raw and soft, tender tuna is preferable. Although not one of the most traditional Mexican recipes because of the fruitiness, this passion fruit ceviche has a wonderful flavor and combines sweetness with spice.

Sweet and Spicy Passion Fruit Ceviche

Ingredients -

1 lb yellow fin tuna
2 tablespoons chopped cilantro
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1 mango, peeled and diced
2 passion fruits, juiced
½ teaspoon rocoto pepper puree
½ teaspoon aji Amarillo
¼ cup fresh lime juice
½ cup mango nectar
1 red onion, chopped
Lime slices and avocado wedges to serve

Preparation:

Puree the ginger, garlic, limejuice, pepper puree and aji amarillo in a blender.

Transfer to a bowl and stir in the cilantro.

Cut the tuna into small cubes. Combine the fruit and fruit juices in another bowl and add this mixture to the tuna mixture.

Stir in the limejuice mixture and chill for an hour or more, so the flavors can blend.

Serve with lime slices and avocado to garnish.

(Serves 4)
