Shrimp and Chorizo Paella Recipe

Paella is a classic Spanish recipe, which has made its way to the new world, becoming a favorite not only in Mexico, but in the United States and Canada as well. This is a rice-based dish, which takes a little time and effort to prepare, but the end result is well worth the trouble.

This paella recipe is a classic Spanish-style recipe, featuring shrimp and the spicy Spanish sausage known as chorizo (which is also popular in Mexico). Combining the flavors of shrimp, saffron, bell peppers, and spices with the spicy kick of the chorizo, this paella is a winner at any dinner table.

There are quite a few ingredients in this recipe, so give yourself plenty of time to prepare this paella - again, you will agree that it is more than worth the effort once you try it for yourself. You may even find yourself wanting to make it again very soon.

Paella Recipe With Shrimp and Chorizo

Ingredients -

2 tablespoons olive oil
1 tablespoon Spanish paprika (Hungarian may be substituted if necessary)
2 teaspoons dried oregano
salt and black pepper to taste
2 tablespoons olive oil
3 cloves garlic, minced or crushed
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 pinch saffron threads
1 bay leaf
3 tbsp Italian flat leaf parsley, chopped
1 quart chicken stock
2 lemons, zested
1 Spanish onion, chopped
1 red bell pepper, coarsely chopped
1 pound chorizo sausage
1 pound shrimp, peeled and deveined

Preparation:

This one takes a while to make, so allow yourself plenty of time to get your paella ready. Start by heating one tablespoon olive oil over medium heat in a large skillet.

Once it is hot, add the rice, garlic, and red pepper, stirring to coat the rice with the oil and spices (2-4 minutes).

Add the stock, saffron, parsley, oregano, bay leaf, and lemon zest. Bring the mixture to a boil, stirring occasionally and reduce the heat to a simmer.

While your paella is simmering, heat the other tablespoon of olive oil in a smaller skillet and sauté the chorizo, shrimp, onion, and bell peppers until the chorizo and shrimp are thoroughly cooked.

Once the rice is, tender (about 15-20 minutes), gently stir in the chorizo and shrimp mixture, or simply top the paella with the mixture before serving. Serve hot and enjoy!
