Paella Recipes with Shrimp, Chicken, and Chorizo

Paella is a classic dish with origins in the Spanish region of Valencia. Though it is largely regarded as a regional favorite in its country of origin, it has become a very popular recipe in the Americas, especially in Mexico and other countries which are former Spanish colonies.

Paella can be made with almost any mix of ingredients, though seafood ingredients such as shrimp are the most common, followed by chicken, and the spicy Spanish sausage called chorizo. As it happens, this paella recipe contains all of the above, combining chicken, shrimp, chorizo, bell peppers, peas, and spices into a delicious blend of flavors.

It is a satisfying meal which definitely qualifies as comfort food. If you've never tried paella before, you're in for a treat - it can take a while to cook this chicken and shrimp paella recipe, but it's well worth the effort, as you'll agree once you try it yourself.

Chicken, Shrimp and Chorizo Paella

Ingredients -

2 cups white rice, uncooked
2 pounds skinless, boneless chicken breasts, cut into small pieces
1 lb chorizo, removed from casing and crumbled
1 lb shrimp, peeled and deveined
1 red bell pepper, diced
1 large yellow onion, diced
½ cup fresh or frozen peas
4 tablespoons olive oil
1 tablespoon paprika
2 teaspoons dried oregano
3 cloves garlic, crushed
1 teaspoon crushed red pepper flakes
A pinch of saffron
1 bay leaf
½ bunch Italian flat leaf parsley, chopped
1 quart chicken or vegetable stock
2 lemons, zested
salt and black pepper to taste

Preparation:

Start by mixing together the oil, paprika, oregano and a little salt and pepper with the cut chicken. Stir well to coat, cover, and refrigerate - this can be done ahead of time as well.

Heat 2 tbsp of oil in a large skillet or wok to medium heat and add the garlic, rice and crushed red pepper flakes. Cook for 3 minutes, stirring constantly. Add saffron, lemon zest, parsley, bay leaf, and stock. Bring the paella to a boil, then reduce to a simmer, covered and cook for 20-30 minutes or until the broth has been absorbed and the rice is completely cooked.

While the rice is cooking, heat the other 2 tbsp olive oil in another skillet on medium-high heat. Once it is hot cook the chicken and onion for 5 minutes, then add the peas, chorizo, and bell pepper and cook for another 5 minutes, then the shrimp. Cook, turning the shrimp occasionally until thoroughly cooked. Place the rice on a serving tray and top with the chicken, sausage, and shrimp and serve with lemon wedges as a garnish.
