Mixed Chorizo Paella Recipe

Paella is a classic dish, no doubt about it. While it may not have quite as long of a history as some other famous dishes (though it is no newcomer either, since it dates from the 1800s), it has taken its rightful place among the world's great culinary achievements.

It is also, at its core, a simple dish: rice cooked with vegetables, spices, seafood, or meat of various types. It is a pretty versatile dish, allowing all manner of innovation by cooks. There are probably as many paella recipes out there as there are cooks who know how to make it and that is yet another wonderful thing about this rice dish.

This chorizo and shrimp paella recipe is bursting with the flavors of Spain; tender rice delicately spiced with saffron and cooked along with mouthwatering shrimp and succulent, spicy Spanish sausage. There is no other way to put it - this paella recipe is nothing short of a triumph.

Hearty Paella with Shrimp and Spanish Sausage

Ingredients -

¼ cup olive oil
1 small onion, peeled and cut in thin strips
2 garlic cloves, minced
1 red bell pepper, seeded, diced
2 cups (or one 14 ½-ounce can) chicken stock
2 cups regular rice
1 teaspoon saffron (or turmeric)
Salt and pepper to taste
1 pound chorizo, cut into ½ inch slices or crumbled
½ pound large shrimp, cleaned and cooked
1 cup frozen peas
Lemon wedges, for garnish

Preparation:

You will need a large, heavy skillet with a lid for this recipe (a wok can fill in as well if needed). Start by heating the oil in the skillet and sauté the onion, garlic, and red pepper on medium heat until the onion turns golden brown. Add the rice and stir constantly until it is thoroughly coated with oil and becomes golden, about 4-5 minutes. Add the stock and saffron and bring to a boil, covered.

Add the sausage and cook for a few more minutes until heated through, then add the stock to the rice and cook for about 10 minutes. Lay the shrimp and peas on top of the rice and reduce heat to a simmer, cooking for another 10 minutes or until the stock has been absorbed and the rice is tender. Let stand for a few minutes and serve with lemon wedges.
