Sometimes you just do not feel like cooking and even if you normally pride yourself on your culinary skills, you just do not want to spend more than five to ten minutes in the kitchen making breakfast. However, you do not always need to invest a lot of time and effort into making a meal which tastes great.
As one example, there is this incredibly quick and easy huevos rancheros recipe, which can be made in as little as five to seven minutes. In order to keep things simple, this recipe uses canned refried beans and ranchera salsa from a jar rather than homemade salsa or beans.
This recipe can be made even on a busy weekday morning, since it does not take much more time than making toast, for example. Many people love huevos rancheros so much that they would be happy to eat it at lunch or dinner as well, so file that idea away for the next time you would like to have dinner on the table as soon as possible without spending a lot of time cooking.
Ingredients -
8 eggs, cooked sunny side up
8 corn tortillas
1 can (15-16 oz) refried pinto or black beans
2 cups ranchera salsa (available in a jar at Mexican groceries and most supermarkets)
Salt and black pepper, to taste
Pickled jalapeno slices, lime wedges, and a little chopped cilantro, for serving
Preparation:
Heat a large frying pan or griddle to medium while you toast your tortillas.
Once they are done, wrap them in a clean kitchen towel to keep them warm.
In a small saucepan, heat up the salsa over medium-low heat while you begin cooking the eggs, seasoning with a pinch of salt and black pepper.
While the eggs cook, heat up the beans (this may be easiest to do in the microwave, if you have one).
Spread each tortilla with beans, laying two on each plate.
Top each tortilla with an egg, salsa, and a little chopped cilantro. Serve hot with extra tortillas, lime wedges, and pickled or fresh jalapeno slices.
