Huevos Rancheros is a classic Mexican breakfast dish whose popularity has spread far past the borders of the county and become a favorite with people all over north, central and south America. Modeled after the substantial morning meals traditionally eaten by farm workers in Mexico.
Huevos Rancheros is a hearty breakfast consisting of fried eggs (sunny side up or over easy) with tomato salsa served over corn tortillas. Often accompanied by beans, rice and/or sliced avocadoes (as well as salads when served at lunch or dinner), this is a dish which is good enough that it need not be confined to the breakfast table.
Even though it is a relatively simple dish to prepare, it does take a little more time than you might expect, especially if you are making everything from scratch, so allow some time. You can find pre-made ranchero sauce in many grocery stores; it is definitely worth the time and effort it takes to make your own.
Ingredients -
For the Ranchero Sauce:
1 cup onions, diced
1 cup tomatoes, diced
½ cup tomato juice
¾ cup bell pepper (green or red), diced
1-2 jalapenos, minced (adjust to taste)
1 tsp cumin
1 tbsp cilantro, chopped
1 tbsp vegetable oil
Salt and pepper, to taste
8 eggs
4 corn tortillas
2 cups refried beans, warmed up (either homemade or canned)
Vegetable oil for sautéing
Preparation:
Heat vegetable oil in a skillet over medium heat. Add the peppers and onions and cook for 3-5 minutes over medium heat, stirring regularly. Add the tomatoes, garlic, cilantro, and cumin and cook for a few more minutes before adding the tomato juice. Cook until sauce thickens, about 10-15 minutes, stirring frequently.
When the sauce is getting close to finished, it is time to heat up the refried beans and tortillas as well as start frying the eggs. The tortillas can be either toasted over a gas flame or heated in a skillet with a small amount of oil.
Once everything is cooked, you can finally assemble your Huevos Rancheros. Spread a little refried beans on each of the tortillas, then top with two eggs and finally the Ranchero sauce. Serve the remaining refried beans along with the Huevos Rancheros and if desired, rice, avocados or a small salad.
