Authentic Mexican Breakfast Food - Huevos a la Mexicana

There are a lot of people who love Mexican food at any time of the day. This does not, however, mean that you are limited to the same old tacos and burritos for breakfast, lunch, and dinner if you happen to be one of those people.

There are plenty of great Mexican breakfast foods which make a welcome change of pace from the tried and true south of the border favorites; after all, Mexicans don't eat the same thing for every meal, so why should you?

This classic Mexican breakfast recipe, Huevos a la Mexicana, combines scrambled eggs along with tomatoes, onion, and chilies to make a dish, which is a wonderful take on the usual scrambled eggs and is undoubtedly a breakfast classic in its own right.

Huevos a la Mexicana

Ingredients -

8 large eggs
3 roma tomatoes, diced
2 jalapeno or Serrano chilies, diced (use more or less according to taste)
1 medium sized onion, diced
Cilantro, for garnish
1 tbsp olive or canola oil
A pinch of salt and black pepper

Preparation:

You should not have too much trouble with this quick and easy traditional Mexican breakfast. Simply dice the vegetables and chop a few sprigs of cilantro and start sautéing them over medium heat in a skillet. Stir periodically while you beat the eggs with a little salt and pepper. Once the onion starts to turn translucent (about 2-3 minutes), add the eggs and cook, stirring regularly until cooked through and fluffy.

Garnish with cilantro and serve at once, along with refried beans, Mexican rice, and tortillas, if desired.

This recipe will serve four; feel free to divide or multiply the recipe as needed.
