Oaxacan-Style Hot Grilled Mexican Shrimp Recipes

If shrimp is one of your favorite foods, you are not alone. Many people count this crustacean as one of their very favorite meals; and if you are one of the many shrimp lovers who is also a fan of Mexican food, then you will love this recipe for grilled shrimp, prepared in an Oaxacan inspired style.

It is actually a very simple recipe; the shrimp is marinated in lime juice, olive oil, garlic, cilantro, Serrano peppers, and spices overnight (or at least for several hours before grilling). You can then grill it to your desired doneness - at least until the shrimp turn completely opaque, but many people prefer to get just a little bit of a char on their shrimp.

The final step is perhaps the most inspired - serving perfectly grilled shrimp on top of sliced avocado and grapefruit segments, along with cherry tomato halves and lime wedges on the side. As far as shrimp goes, it is hard to think of a better way to cook.

Grilled Shrimp with Tomato, Grapefruit, and Avocado

Ingredients -

2 lbs large shrimp, peeled and deveined
½ cup olive oil
½ cup cilantro, chopped
1 cup lime juice (fresh squeezed)
6 cloves garlic, minced or crushed
2 serrano peppers, minced
2 tsp cumin
1 tsp crushed red pepper (or crushed dried Ancho chili)
Salt, to taste
Wooden skewers for grilling
Avocado slices, grapefruit segments, halved cherry tomatoes and lime wedges, for serving

Preparation:

Marinate the shrimp in the lime juice, olive oil, garlic,

Serrano peppers, crushed red pepper or crushed Ancho pepper, cumin, cilantro and a little salt for 4 hours or overnight.

Soak the skewers in cold water before grilling (this keeps them from breaking when turned).

Grill the shrimp until slightly charred and serve hot over a bed of avocado slices, grapefruit segments, cherry tomato halves, with plenty of lime wedges and some cilantro sprigs on the side.
