Grilled Meat - Mexican Style

Grilling is a type of cooking which you will find in every country and across every culture on Earth. It is a simple way to prepare meats and other foods and grilling meat imparts a flavor which is all its own. From barbecues to spit-roasted meats, grilling has a place in all of the world's cuisines; and of course, Mexican cooking is no exception.

From the classic carne asada (grilled steak) to grilled chicken, fish, and other meats, many Mexican meat recipes involve grilling. It is a simple recipe to prepare, but one which is a perennial favorite which may be served in tacos, as fajitas or in any number of other dishes.

You may prepare Mexican grilled meats along with grilled vegetables or on its own accompanied with tortillas, cilantro, onion, and the salsa of your choice. Really, there's no way you can go wrong with grilling, so it is all about serving it however you prefer. From salads to sandwiches and everything in between, you will never be at a loss for ways to enjoy this, the very simplest of Mexican meat recipes. In this recipe, the meat is marinated overnight, but you can prepare it anyway that matches up with your own tastes.

Mexican Style Grilled Meat

Ingredients -

2 to three pounds skirt steak (flank steak is also fine)
1 large yellow or white onion, sliced thin
Juice of 2 oranges and 1 lime
Salt and black pepper, to taste
⅓ cup vegetable oil

Preparation:

Place all ingredients in a large bowl and refrigerate. Allow the meat to marinate overnight if possible, but at least two hours if you are pressed for time.

Start the fire on your grill; if you can, use mesquite, though this may be skipped if this is not possible for you. Once the fire is ready, it is time to grill. You can probably figure out this part on your own - simply grill the steak to taste.

You may want to add some peppers (bell peppers or chili peppers) and onions to the grill as well; they make a perfect accompaniment to this easy Mexican meat recipe.
