Black Bean, Rice, and Cheese Chimichangas

Chimichangas, those savory, exceptionally filling deep fried variations on the burrito are something that people usually love once they have tried them. It's hard not to like a deep fried burrito, after all - and since like burritos, you can fill them with anything you like, you can ensure that your chimichangas match your appetite, whatever you happen to feel like having.

One of the more popular fillings for chimichangas on both sides of the Rio Grande is a classic: refried black beans and rice. Along with cheese, jalapeno and onion along with plenty of salsa, it's hard to beat a black bean and rice chimichanga for a satisfying and filling meal which hits the spot every time.

This is an easy recipe to make, so do not worry if you have never tried making chimichangas before. You can do it - and once you see how easy it is to make, you will probably want to make them a regular part of your Mexican culinary repertoire.

Black Bean Chimichangas

Ingredients -

1 can (16 oz) refried black beans (you can also make your own if you like)
4 large (burrito size) flour tortillas
1 cup cooked rice
16 oz Monterey Jack or sharp cheddar cheese, grated
1 cup salsa (your choice) plus more for serving
1 small red onion, diced
1 jalapeno, diced
Juice of 2 limes
Salt and black pepper, to taste
Oil for sautéing and deep frying

Preparation:

Start by sautéing onion and jalapeno in a little oil, stirring regularly. Once the onions and jalapeno become tender, add the refried beans, rice, and salsa and cook over medium heat until thoroughly heated through.

Season to taste with salt, black pepper and lime juice and fill the tortillas with the bean and rice mixture. Top each with slightly less than ¼ of the cheese and fold up into burritos.

In a large, deep pan, heat the oil. Once it is ready, fry the chimichangas for 3-5 minutes or until they turn golden brown. Drain on paper towels and serve hot topped with a little more cheese, salsa, and any other garnishes you prefer.
