Ingredients -
2 lbs boneless skinless chicken breasts
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
½ teaspoon chili powder
1 ½ teaspoons salt
1 chipotle chili in adobo, minced
¼ cup light brown sugar
2 tablespoons fresh cilantro leaves, minced
1 lime, in wedges
Sprigs of thyme to garnish
Chili dipping sauce
Preparation:
Cut the chicken into ½ inch strips and put the other ingredients in a Ziploc bag. Shake well until everything is mixed together, and then add the chicken. Shake again until all the chicken is covered in the marinade.
Refrigerate for 30 to 60 minutes.
Put an oven rack up high near the broiler and line a broiler pan with foil.
Top it with a slotted top and spray some cooking spray on it.
Thread the chicken strips on to skewers and put them on the broiler pan.
Broil for 5 to 8 minutes, flipping the chicken skewers halfway through.
Serve hot with thyme and lime wedges.
Serve the dipping sauce on the side too.
