Ceviche has been with us for a very long time indeed. Originating in ancient South America, this method of "cooking" fish and other seafood by marinating it in lime juice has been in use for more than a thousand years and perhaps longer. Over the centuries, it's made its way north to Central America, Mexico and is now becoming fairly common in the US and Canada, as well as in Europe.
The secret to this tuna ceviche recipe is the same as for any other kind of ceviche: high quality ingredients. It is just like making a salad - if your ingredients are good, you cannot go wrong.
Because the quality of your ingredients is so important to this dish, make sure to get the best sushi grade tuna you can find. Do not skimp here, the better the tuna, the better your ceviche will be. The same goes for the vegetables and limes in the dish. Take your time and choose your ingredients carefully and you will be certain to make something absolutely wonderful.
Ingredients -
1 lb tuna (sushi grade)
½ a red onion, diced small
1 roma tomato, diced
1 Serrano pepper, diced small
¾ cup fresh lime juice (about 10-12 limes)
1 tsp salt
2 tbsp chopped cilantro
Avocado slices, lime wedges, and tortilla chips, for serving.
Preparation:
Chop the tomato, onion, Serrano, and cilantro and slice the tuna into ½ inch chunks. Mix together in a glass or ceramic (not metal - it can react with the lime juice) and add the lime juice and salt. Stir well, cover and refrigerate for one hour, then stir again and return to the refrigerator, covered for at least 3 hours, preferably 4-5 hours. Serve with lime wedges, tortilla chips and avocado slices.
