If you have not yet had the pleasure of eating ceviche for yourself, it may sound like an odd concept. Due to the widespread popularity of sushi and sashimi, raw fish and other seafood is not as much of a novelty as it used to be, but the idea of cooking these foods by marinating them in lime juice can be a strange one to those unaccustomed to the dish.
However, do not let the unfamiliarity of ceviche keep you from trying it; or for that matter, from making it at home. This tilapia and shrimp ceviche recipe makes a great way to experience this ancient South American method of preparing seafood and as you will find, it is also one of the most delicious seafood dishes you have ever tasted.
Ceviche is also easy to make, requiring no more time or effort in the kitchen than making a salad. With a few minutes of preparation and a few hours of marinating, you will have made something that tastes incredible and will have your dinner guests asking for the recipe.
Ingredients -
1 pound tilapia fillets
½ pound shrimp, peeled, deveined and blanched
1 white onion, diced
2 tomatoes, diced
¼ cup cilantro, chopped
1 jalapeno, diced small (adjust to taste)
16 limes, or as needed to cover
Salt and black pepper to taste
Lime wedges and tortilla chips, for serving
Preparation:
Chop the tilapia into ½" pieces (and the shrimp as well, unless they are smaller or you prefer to keep them whole).
Chop the onion, cilantro, tomatoes, jalapeno, and combine all of the above in a large ceramic or glass bowl (not metal, since this may react with the acids in the lime juice) and stir well.
Cover and refrigerate for one hour, stir well and return to the refrigerator for 2-4 hours before seasoning with salt and black pepper. Serve with tortilla chips and lime wedges.
(Serves 3 - 4)

Tilapia is a very popular fish these days and if you are already a fan, why not try it in a different way by making this tilapia and shrimp ceviche? Instead of spending time over the stove, you can let the lime juice to the work - and in fact, you will notice the color of the fish change from translucent to white as it marinates, just as if it were cooked with heat. Along with shrimp, hot peppers, lime juice, onion, cilantro, and tomato, it is absolutely amazing. You might be surprised by how great it is - and more than one seafood lover has become a diehard ceviche fan once they give it a try. You could have it at a restaurant, but when it is so easy to make and so wonderful, you can make a batch all by yourself any time you like.
