Squid Ceviche Recipe

Squid is one kind of seafood which a lot of people really like, but are at a total loss when it comes to the idea of cooking it at home. It is true that making your own squid dishes can be something of a challenge, with the exception of deep fried variations. However, not everyone wants to deal with deep frying either - and when prepared in a lighter fashion, it can be simply delectable.

Instead of puzzling over how to cook squid at home, why not try not cooking it instead? That is to say, why not make a squid ceviche? It is light, delicious, and easy to make at home. Instead of actually cooking the squid, you can simply marinate it in lime juice with jalapeno, onion, and cilantro for something incredibly good.

You will be surprised at how amazing squid tastes when you take a detour from the tried and true methods and give this easy squid ceviche recipe a try. The next time you see fresh squid at your local seafood market, pick some up, and make this recipe - you will be glad you did.

Easy Squid Ceviche

Ingredients -

6 to 8 whole squid, cleaned and sliced into ¼-inch rings
1 small red onion, diced
1 jalapeno, diced small
2 Tbsp cilantro, chopped
Fresh squeezed lime juice (about 16 - 20 limes)
1 clove garlic, smashed (not minced, not pressed)
Salt and black pepper, to taste
Tortilla chips and lime wedges, for serving

Preparation:

Start by juicing one lime into a large glass or ceramic bowl (you will be using this bowl for your other ingredients later on). Smash a clove of garlic and add it to the juice - the idea is to get plenty of garlic flavor into the juice while still being able to remove the clove easily. Leave the garlic in the juice while you clean and slice the shrimp and chop the vegetables and cilantro.

Add all of your ingredients except for the salt and pepper to the bowl, removing the garlic clove first. Juice the limes over the ceviche, making sure there is enough to cover (or nearly so) the squid. Stir well, cover, and refrigerate for one hour. Remove, stir again, and return to the refrigerator. Marinate for another 2-3 hours, season to taste with salt and black pepper and serve with tortilla chips and lime wedges.
