The following shrimp ceviche recipe combines tasty shrimp with lemon juice, lime juice, Serrano chili, cilantro and more for a delicious and authentic Mexican flavor. If the flavor is too acidic for your taste, you can drain off some of the marinating juices and add some more olive oil or avocado, or a little more salt, to counter the acidity.
Ingredients -
1 lb peeled, de-veined, small to medium shrimp
¾ cup lemon juice
¾ cup lime juice
2 tablespoons salt
4 quarts water
1 cup chopped cilantro
1 cup finely chopped red onion
1 peeled, stoned avocado, in 1/2 inch cubes
1 peeled cucumber, in 1/2 inch cubes
1 minced Serrano chili, seeds, and ribs removed
6 slices lime, for garnish
Preparation:
Add the salt to the water in a big pot and cook the shrimp for 1 or 2 minutes, depending on their size.
As soon as they turn pink, they are done.
Transfer the shrimp to a bowl of ice water to stop them cooking any more, then drain them and cut them into 1 inch pieces if they are larger.
Add the shrimp to a ceramic or glass dish and stir in the citrus juices.
Cover and chill for 30 minutes. Add the chili and onion.
Chill for 30 more minutes.
Stir in the cucumber and avocado and divide the mixture between 6 serving glasses.
Decorate each one with a slice of lime.
