Scallop Ceviche Recipe

Ceviche is a classic method of preparing fish and seafood which originated in South America, but has since made its way around the world and can be found in restaurants almost everywhere. Rather than being cooked with heat, the seafood and other ingredients (usually including hot peppers) are marinated in lime juice for several hours, with the process "cooking" the seafood in a manner of speaking.

One of the most popular ingredients for ceviche is scallops. These mollusks are popular the world over, but it is in ceviche where their flavor is allowed to truly shine through, without the sautéing in butter or deep frying which is often used to prepare them.

This scallop ceviche recipe is a very simple one to prepare, with a small list of ingredients and only minimal preparation time needed. While it might be easy to make, it has a flavor which is rewarding out of all proportion with the tiny bit of effort needed to put it all together - which makes the perfect dish for the summer when you don't want to spend too much time in the kitchen.

Mouthwatering, Spicy Scallop Ceviche

Ingredients -

1 lb scallops
½ a small red onion, diced
½ a red bell pepper, diced
1-2 jalapenos, diced
1 roma tomato, diced
2 tbsp cilantro, chopped
1 cup fresh squeezed lime juice, or more if needed to cover
Salt and black pepper, to taste
Tortilla chips and lime wedges, for serving

Preparation:

There is really almost nothing easier than making this delicious and spicy scallop ceviche.

Start by chopping the onion, bell pepper, cilantro, tomato, and jalapeno and combining all of the above in a glass or ceramic bowl. Cover with lime juice, stir well and refrigerate, covered.

After one hour, remove from the refrigerator, stir well again, and return to the refrigerator. Allow to marinate for another 2-4 hours, season to taste with salt and black pepper and serve with tortilla chips and lime wedges.
