If there is one kind of fish which just about everyone knows and likes, it is salmon. This large, firm-fleshed and very flavorful fish is incredibly popular and is enjoyed in preparations ranging from smoked or cured (like lox and its Scandinavian cousin gravlax) to croquettes to steaks and everything in between.
However, as many different ways as you have had this popular fish before, you probably have not had it in a ceviche before - and if not, then it is definitely time to change that. This basic salmon ceviche recipe is terrific and takes only a bare minimum of time to prepare at home. The key, as with all ceviche is to use the best, freshest ingredients you can find. Get on your local seafood merchant's good side, pick the best produce and the results will be incredible.
While salmon is not a fish which traditionally makes its way into ceviche, since it tends to live in colder waters than South America where the dish originated, it takes wonderfully to the method. Salmon has a wonderful flavor which if anything, is even better for not having been cooked with heat.
Ingredients -
1 pound salmon fillets, skins removed
½ red onion, diced small
1 jalapeno or 1-2 Serrano peppers, minced
2 small tomatoes, diced
Juice of 12 limes, or more as needed
½ bunch cilantro, chopped
Salt and black pepper to taste
Avocado slices, lime wedges, and tortilla chips, for serving
Preparation:
Cut the salmon into half inch pieces and dice the onion, peppers, tomatoes and cilantro, combining all into a large non-reactive (glass or ceramic) bowl.
Squeeze the limes over the ceviche and stir well before refrigerating, covered for an hour.
Stir again and return to the refrigerator for another 3-4 hours, season to taste with salt and black pepper and serve with lime wedges, avocado slices, and tortilla chips.
