Recipe for Shrimp Ceviche with Red Snapper

On a hot summer's day, you want an evening meal which is refreshing and more to the point, cool rather than hot. However, you are feeling like something a little more substantial than a green salad and some fruit, so how about ceviche?

This ancient raw seafood dish is a great choice for warm weather meals and it is the perfect thing for those days when it is just too hot to spend your time hovering over the stove. This shrimp and red snapper ceviche is just what the doctor ordered for summer, although you can enjoy this ceviche recipe at any time of the year of course.

Marinated in tangy lime juice and spicy Serrano peppers, along with tomatoes and cilantro, this ceviche offers the mouthwatering flavors of shrimp and red snapper in a form which is ideal for summer. Spicy, cool, and refreshing all at the same time, this is one of the best and easiest dishes for summer when you would rather spend your time outdoors instead of in the kitchen.

Tangy Shrimp Ceviche with Red Snapper

Ingredients -

1pound raw shrimp, peeled and deveined
½ pound red snapper filet, deboned
1large tomato, diced
1 small red onion, diced small
1cup fresh squeezed lime juice (about 10-15 limes)
2 Serrano peppers, diced small
1tsp oregano, preferably Mexican oregano
2 tbsp cilantro, chopped
Lime wedges and tortilla chips, for serving

Preparation:

Peel and devein the shrimp and slice the red snapper into ½" pieces, deboning the filet if necessary. Chop the tomato, Serrano peppers, onion, and cilantro and mix all ingredients together in a glass or ceramic bowl. Add the lime juice and oregano, stir well and refrigerate for one hour. Stir well once again and refrigerate for 3-6 hours before serving with tortilla chips and lime wedges.
