As you will find out when you make this Nicaraguan inspired lobster ceviche recipe, it is a wonderful combination. If you already love lobster, you will wonder how you ever lived without this dish in your repertoire. It is a great way to enjoy everyone's favorite crustacean.

Lobster Ceviche

1 pound lobster tail meat, parboiled
½ cup fresh squeezed lime juice
1 small red onion, diced
1-2 Serrano peppers, diced small
2 tablespoons chopped fresh cilantro
½ tsp salt or to taste
Tortilla chips and lime wedges for serving

Preparation:

Start by cooking the lobster in boiling water for 3-4 minutes, then removing and placing in a bowl full of ice water to stop the cooking. While it cools, chop the onion, peppers, and cilantro.

Once the lobster is cool, remove the shell and cut into ½ inch pieces and mix together with the other ingredients in a glass or ceramic bowl. Stir well, cover, and refrigerate for one hour. Remove from the refrigerator, stir well again, cover, and return to the refrigerator for another three to six hours. Serve with tortilla chips and lime wedges.

Lobster Ceviche Recipes

Photo Description:

Usually, ceviche recipes do not require any cooking - at least with fish, shrimp and other seafood. Lobster, however is a different story and it does best to cook it about halfway before marinating it in lime juice, peppers, onion and spices. This ensures the best texture and flavor and really, it is only a few minutes of cooking, still much less than you would have to handle for virtually any other lobster or shellfish dish.

This incredible lobster ceviche recipe is still incredibly easy to make, requiring only minutes in the kitchen. You can whip up this recipe in the morning, give it the first stir after an hour in the fridge and then go about your day - and you'll have some great ceviche to look forward to all day.
