While it is not actually a dish which is native to Mexico, ceviche is something which has indeed become very popular in this country. An ancient recipe, ceviche is believed to have originated somewhere in South America during the days of the Incan Empire.
For those unfamiliar with ceviche, it is somewhat akin to sushi or sashimi in that it is a dish whose main ingredient is raw seafood. While the seafood in ceviche may be uncooked in that it is not cooked with heat, it is marinated in citrus juices with chili and salt, which makes this dish safe to eat (not to mention delicious) as long as it is made with fresh, high quality seafood.
Ceviche is easy to make as well. It just takes a few minutes to prepare and then the ceviche just needs to marinate before serving. As such, you would generally make it ahead of time, so it is a reliably quick and easy dish to serve, especially in the summer.
Ingredients -
2 lbs of firm, fresh red snapper fillets, deboned and cut into ½ inch pieces
½ cup each of fresh squeezed lime and lemon juice
1 small red onion, diced small
2 roma tomatoes, diced (about 1 cup)
2 serrano chilies, diced small
2 tsp salt
A pinch of oregano and cayenne
2 tbsp cilantro, chopped
Avocado slices, lime wedges, and tortilla chips, for serving
Preparation:
Debone and cut the red snapper into ½ inch pieces and dice the onion, tomatoes, Serrano peppers, and cilantro. Mix the vegetables and red snapper in a glass or other non-reactive dish (do not use a metal dish or bowl to prepare ceviche, due to the acidity of the citrus juice).
Add the lemon and lime juice, salt, cayenne, oregano and cilantro to the ceviche and mix well.
Refrigerate for an hour, covered and stir well, then return to the refrigerator for another 3-4 hours.
Before serving, slice an avocado into thin slices, cut lime wedges, and serve along with the ceviche and tortilla chips.
