Tasty Taco Mexican Casserole Recipe

This Mexican taco casserole recipe is very easy and straightforward to prepare and it makes an excellent dinner for a busy weeknight because you simply have to combine the ingredients, transfer everything into a baking dish, and back the taco Mexican casserole recipe until it is heated through and the cheese is melted over the top. Ground beef features in a lot of casserole recipes however because it is easy to work with, browns quickly and is ideal for making quick yet satisfying meals. You can use extra lean ground beef if you like but lean or regular does have more flavor. Mexican Taco Casserole Recipe with Kidney Beans

Ingredients -

1 lb ground beef
1 cup water
1 chopped onion
2 finely chopped cloves garlic
¾ cup taco sauce
14 oz can kidney beans, drained
2 peeled, chopped fresh tomatoes
3 oz diced green chilies
4 ½ oz package taco shells or tortilla chips, broken
1 package taco seasoning mix
2 cups shredded cheddar cheese
Fresh parsley, to garnish

Preparation:

Preheat the oven to 375 degrees F.

Sauté the beef with the garlic and onion until the beef is browned.

Drain off the fat. Stir in the kidney beans, water, taco sauce, chilies, taco seasoning mix and chopped tomatoes.

Cook the mixture over a low heat for a few minutes.

Layer half the broken taco shells in a 13 x 8 inch greased dish.

Add half the meat sauce and then half the cheese.

Repeat with the rest of the taco shells, sauce, and cheddar.

Bake the casserole for twenty minutes or until the cheese is melted.

Garnish with fresh parsley and serve hot.
