The juicy shrimp are cooked with onion, okra, white wine, and cream of mushroom soup, bell peppers and more, for a nutritious casserole, which is bursting with flavor. If you enjoy the seafood taste, you might like to use cream of shrimp soup rather than the cream of mushroom soup, or even half of each one.
You can make some recipes for Mexican casserole in advance, including this one. Simply make it up to the baking stage, then cover it and refrigerate for a day. Let it stand for half an hour at room temperature before baking it. If you want to freeze this Mexican casserole recipe, prepare it following the recipe but without the parmesan or cheddar cheeses. Cover it tightly and freeze it. Let it stand at room temperature for half an hour before you bake it, then bake for fifty minutes at 350 degrees F. Sprinkle the cheese over it and bake for ten more minutes or until the cheese is melted and golden brown.
Ingredients -
2 lbs big unpeeled shrimp
1 chopped red onion
2 cups sliced okra
4 minced garlic cloves
½ cup chopped yellow bell pepper
½ cup chopped green bell pepper
½ cup chopped red bell pepper
½ cup dry white wine
¼ cup butter
1 ½ teaspoons salt
3 cups cooked long grain rice
10 ¾ oz can cream of mushroom soup
1 tablespoon lemon juice
1 tablespoon soy sauce
¼ cup grated parmesan
¼ cup grated cheddar
½ teaspoon cayenne pepper
Parsley and lemon slices, for garnish (optional)
Preparation:
Peel and de-vein the shrimp.
Preheat the oven to 350 degrees F.
Melt the butter in a skillet over a moderate to high heat, then add the onion and bell peppers and sauté for 6 to 8 minutes, or until the vegetables are tender.
Add the garlic and cook for 1 minute more.
Stir in the lemon juice, salt, and okra and cook for 5 minutes.
Add the shrimp and cook until they turn pink.
Stir in the mushroom soup, cayenne pepper, wine, rice, and soy sauce, then pour this mixture into a greased 7 x 11 inch baking pan and sprinkle the parmesan over the top.
Scatter the cheddar over the top.
Bake the Mexican shrimp casserole for 15 minutes or until the cheese is lightly browned and the casserole is bubbly.
Garnish with the parsley and lemon slices if you like.
