Mexican Ground Beef Casserole with Cornbread

Among the reasons that ground beef is so popular are that it cooks very quickly and can be used in literally hundreds of different dishes. Cooks often experience ground beef burnout, however and their families also dread the appearance of yet another hamburger surprise. This Mexican ground beef casserole recipe provides a genuine hamburger surprise, with a dish so great your family will stop dreading casseroles because of what they imagine them to be, and start looking forward to them instead.

This Mexican casserole combines ground beef with cornbread, cheddar cheese, and mildly spicy banana peppers to create a dish, which is something like a Mexican shepherd's pie. If you like making shepherd's pie you will find this similar in a way. Like most casseroles, this is a quick and easy answer to "what's for dinner?" that will get requests for second helpings instead of the groans the same old casserole receives.

Mexican ground beef casseroles like this one are always warmly received because they taste so good. The homemade cornbread is filled with a beef, onion, cheese, and banana pepper mixture, making this totally different from the casserole recipes you might have made in the past. Mexican casseroles with ground beef are always good and this one is extra special.

Mexican Ground Beef Casserole

Ingredients -

For The Cornbread

2 cups cornmeal (use self-rising cornmeal)
2 eggs, beaten)
½ cup vegetable oil (or melted butter, if desired))
½ tsp sugar (optional))
A pinch of salt, if desired)
10 oz corn (canned or fresh cut and cooked))
¾-1 cup milk

For The Filling:

1 ½ lb ground beef - (the leaner, the better)
1 large or 2 small white or yellow onions, diced)
4 banana peppers, diced finely (more or less may be used to taste; jalapenos may also be added))
2 cups sharp cheddar, grated

Preparation:

Preheat oven to 350 degrees.

Mix the first set of ingredients to make a medium thick batter about the same consistency as a cake batter.

As you do this, cook the beef, onions and peppers in a cast iron skillet until the beef is browned, breaking the meat into small pieces as you cook.

Drain off as much of the grease as possible and set aside in a bowl.

Wipe the skillet clean with a clean cloth and pour in ½ of the batter.

Top the first layer of batter with the meat mixture and the grated cheese, followed by the remaining batter.

Bake for 40-45 minutes, or until the cornbread is golden brown and allow the casserole to cool and set for a few minutes before cutting into wedges and serving.
