Tasty Mexican Fiesta Casserole

Your family will love this flavorful casserole with ground beef, and you will find yourself making it again and again. If you would like a little more heat and flavor, consider adding drained, sliced jalapeño peppers or slices of mild green chilies to the beef mixture. Another option for this easy Mexican recipe is to layer the peppers with the tomatoes.

Want to reduce the fat content? Calorie watchers can substitute ground turkey for the beef and low fat dairy products for the full fat kind. You will still have the delicious flavor of this Mexican fiesta casserole but slightly fewer calories and less fat in each serving. Vegetarians can try TVP instead of ground beef, but may want to add some additional flavorings.

This casserole makes a change from a lot of other stew-like casserole recipes you might have made in the past because you cut this one into squares to serve it. It is more solid. This makes it wonderful to serve at parties, fiestas, or buffets, when you fancy finger food. This Mexican fiesta casserole combines wonderful flavors, ease of preparation and has a great Mexican flavor and style. This is also quite a healthy recipe because of all the vegetables in it.

A Delicious, Mexican Fiesta Casserole

Ingredients -

1 pound lean ground beef
salt and black pepper to taste
1 teaspoon chili powder
1 cup cheddar cheese, shredded
1 cup sour cream
⅔ cup salad dressing or mayonnaise
2 tablespoons onion, minced
2 cups baking mix
½ cup water
3 medium tomatoes, sliced thinly
½ cup green bell pepper, chopped
1 four to six ounce can ripe olives, drained, and sliced

Preparation:

Preheat oven to 375 degrees and grease a 9"x13" baking dish. In a large skillet, over medium high heat, brown beef. Drain excess fat and season to taste with pepper and salt. Mix together sour cream, cheese, onion, and mayonnaise in a small bowl, and then set aside.

Stir baking mix and water together to worm a soft dough. Place into baking dish about a half inch up the sides, using floured fingers.

Layer beef, tomato, green pepper, and olives over dough. Spoon sour cream and cheese mixture onto top of casserole, then bake until dough is light brown - about half and hour. Allow to rest for five minutes, then cut into squares and serve.
