Mexican Egg Casserole Recipe

Mexican cuisine is full of terrific dishes for every meal. Mexican entrees for dinner and lunch are well known, but Mexico is the source of some unbeatable breakfast dishes as well. Just like Mexican cuisine, casserole is not just for dinner anymore. Mexican egg casserole makes a terrific weekend breakfast or brunch, which is sure to impress family and friends.

If you tell your family that you are making casserole for breakfast you might be met with some curious or horrified glances but just serve this and let the recipe talk for itself. This Mexican egg casserole is impressive enough to make everyone ask for second helpings or demand that you make it more frequently!

With eggs, bread, cheese, and bacon all in the picture, this Mexican egg casserole recipe hits all of the classic breakfast bases while including the Mexican flavors of green chilies and oregano. Vegetarians can either omit the bacon or use one of the many imitation bacon products available at most grocery stores. This casserole is savory enough to serve at dinner along with a salad, but really shines at breakfast time served with salsa and plenty of coffee.

Mexican Egg Casserole

Ingredients -

8 slices of French or Italian bread, buttered
8 eggs
2 cups milk
1 cup cooked bacon or bacon substitute, crumbled
1 small red onion, diced
2 cloves garlic, minced
1 ½ cups cheddar, Monterey Jack or Oaxaca cheese (or any combination of the three)
1 cup green chilies, diced
1 tsp oregano
1 tsp cumin or chili powder
Salt and black pepper, to taste

Preparation:

Preheat the oven to 325 degrees F.

Place bread buttered side down in a 9x13 baking dish.

Then cover with a layer of cheese, followed by the chilies and finally the bacon.

Beat eggs, milk, and spices and pour over the bread.

Cover the dish with some foil and bake for 40 minutes, then uncover it and bake for another 10.

Serve hot with salsa and get ready to write down the recipe if you will be dining with guests; Mexican egg casserole is one recipe you will certainly be asked to share.
