Ingredients -
1 pound ground beef or ground turkey
2 cups grated meltable cheese
1 can diced tomatoes, with or without chilies
1 can sweet corn
1 package of sweet yellow cornbread mix
milk, oil and egg as directed by boxed mix
salt and black pepper to taste
Preparation:
Preheat oven to 350 degrees, then brown the meat in a large skillet. Season it with salt and pepper to taste, then drain.
Drain tomatoes and corn, then add to meat, and pour mixture into a greased 9"x13" baking pan. Top meat mixture with cheese.
Prepare cornbread mix according to package instructions, and then pour batter over the cheese. Batter should flow down into other ingredients.
Bake thirty minutes, or until cornbread is done and golden on top.
Allow to stand ten minutes, and then serve.
