This Mexican corn casserole recipe uses whole kernel corn; if sweet corn is in season, then use cooked corn, cut from the cob. If it is not, canned corn will do just fine in this recipe. Corn is allowed to shine in this casserole recipe, working with complementary ingredients like Monterey jack cheese and green chilies against a neutral background. Ingredients -
1 cup biscuit mix *
1 egg
½ cup milk
A pinch of sugar
2 tsp vegetable oil or melted butter
1 ½ cups corn
1 small (4 ounce) can of green chilies
1 Serrano pepper, minced (optional)
1 cup Monterey Jack cheese, shredded
Preparation:
* Biscuit mix is used here as a timesaving measure. If you would rather use your own biscuit recipe, feel free to do so.
Preheat oven to 400 degrees F.
Combine the first five ingredients and mix well to form a batter.
Lightly butter a 9" baking pan or cast iron skillet and turn half of the batter into the pan.
Mix the corn and peppers and layer these on top of the batter, followed by the cheese and finally, the remaining batter.
Bake for 30 minutes or until the top of the casserole is completely set and golden brown.
Remove from the oven and let cool for a few minutes before slicing and serving.
