Mexican Burrito Casserole Recipe

When is a casserole not a casserole? Sometimes, people learn to dread the very word, usually as a result of one too many bland tuna surprises in their childhood. However, a casserole can be nearly anything you want it to be. Any number of delicious combinations of ingredients can come together in a single baking dish and just one of these casserole success stories is this Mexican burrito casserole recipe.

Very similar to the Mexican burrito suizo (wet burrito), this burrito casserole is essentially beef and bean burritos baked in sauce and topped with cheese. Even those who tend to turn a little green at the mention of casserole will find themselves fans. Just be sure to emphasize the "burrito" in Mexican burrito casserole when someone asks you what you are up to in the kitchen.

This Mexican burrito casserole is so straightforward to make. Once you have browned some of the ingredients to make the filling, you simply divide it between the tortillas, add some cheese and sauce, and bake the casserole until it is done. This dish could easily become a family favorite because it is simple yet perfectly balanced and really tasty. In addition, of course it is a breeze for you to put together.

Mexican Burrito Casserole

Ingredients -

½ lb lean ground beef
1 medium yellow or white onion, diced
1 Serrano or jalapeno pepper, minced (optional)
¼ cup black olives, diced (optional)
1 16 oz can refried pinto or black beans
2 16 oz cans enchilada sauce
1 tsp cumin or chili powder
4 large (burrito-size) flour tortillas
½ cup sharp cheddar or Monterey Jack cheese, shredded

Preparation:

Preheat oven to 375 degrees.

Brown the ground beef, onion, peppers, and olives (if using) in a skillet, breaking up the beef as you cook.

Stir in the cumin and/or chili powder and mix well.

Spoon the filling into warmed tortillas, folding each into a burrito and placing into a shallow baking dish.

Pour the enchilada sauce over your burritos and top with cheese.

Bake for 30 minutes or until the cheese is bubbly and slightly browned.

Serve hot with salsa and watch the casserole haters at your dinner table have an epiphany.
