Ingredients -
1 lb ground beef
1 medium white or yellow onion, diced
1 bell pepper (any color you like), diced
1 -2 jalapeno or Serrano peppers, minced (vary the amount to taste)
10 ounces cooked corn
1 16 ounce can crushed or diced tomatoes
2 tsp chili powder - or- 1 tsp cumin and 1 tsp coriander and a pinch of salt
3 cups tortilla chips, broken into small pieces - unsalted chips are best
1 cup Monterey Jack or pepper jack cheese, shredded
Preparation:
Preheat oven to 350 degrees.
In a skillet, brown the ground beef along with the onions, peppers, corn, and spices, about 5-7 minutes, stirring regularly to break the beef into small pieces.
Stir in the tomatoes and simmer for another 4-5 minutes, stirring constantly.
In a lightly oiled baking dish, layer 1 ½ cups of the tortilla chips and top with the beef mixture.
Follow this with the remaining half of the chips, then cheese.
Bake covered for 25 minutes, then uncover and turn your oven to 450 degrees and bake for an additional 5 minutes or until the cheese starts to bubble and brown slightly.
Remove from heat and allow your Mexican beef casserole to cool for a few minutes before serving.
