Three Bean Enchilada Recipe with Corn

You can either use a can of mixed beans for the following three bean enchilada recipe or you can make your own combination. Black beans, kidney beans and white beans are a colorful combination or you could use any other kinds of beans you fancy. The corn adds more color and tastes good with the beans, and the onion and bell pepper add crunch. Using a package of taco seasoning is the easiest way to add Mexican flavor to this three bean enchilada recipe, but you can add some extra chili powder if you like your Mexican food hot and spicy.

Sour cream and black olives make a good garnish but, if you prefer, you could serve guacamole or salsa with these enchiladas, or any other kind of garnish you like. Serve each person one or two enchiladas as an appetizer or three or four as an entrée. Spanish rice goes well with these, or even French fries if you want to add a fusion touch to your meal.

How to Make a Three Bean Enchilada Recipe

Ingredients -

14 oz can mixed beans, drained
½ diced red bell pepper
½ yellow onion, diced
14 oz can corn kernels, drained
1 tablespoon olive oil
1 package taco seasoning
1 cup grated Mexican blend cheese or cheddar
1 diced tomato
12 corn tortillas
¼ cup sliced black olives
Small pot sour cream

Preparation:

Sauté the onions and peppers in the oil in a skillet over a moderate heat.

Add the mixed beans, taco seasoning and however much water the taco seasoning calls for.

Stir well, and then let this mixture simmer for 10 minutes over a low flame.

Wrap the corn tortillas in a damp kitchen cloth and heat them for half a minute in the microwave.

Spread a teaspoon of sour cream down the middle of each corn tortilla, and then sprinkle the tomato and a tablespoon of grated cheese over that.

Divide the bean mixture between the tortillas and roll them up, arranging them seam side down on a casserole dish.

Sprinkle the rest of the cheese over the enchiladas, then broil them for a few minutes or microwave them for 15 seconds or until the cheese melts.

Top the enchiladas with the remaining sour cream and the black olives. Serve 3 enchiladas to each person.
