These enchiladas can be adapted however you want. If you fancy adding some refried beans or diced chicken, go ahead. You can also put some cheese inside the enchiladas, as well as sprinkling it over the top.
The following beef enchiladas recipe calls for cheddar cheese but you can use another cheese if you prefer it, perhaps a Mexican blend or some Monterey Jack. You can spice these enchiladas up as much as you wish, by adding more chili powder or chipotle chilies to the mixture. Serve these easy ground beef enchiladas with salsa, sour cream, and guacamole or a side salad.

Ingredients -
1 lb ground beef
3 cups chicken broth
1 diced onion
1 diced green bell pepper
3 cups grated cheddar cheese
2 cups water
¼ cup flour
1 tablespoon olive oil
1 diced chipotle chili in adobo sauce
2 tablespoons chili powder
1 package medium flour tortillas
1 tablespoon minced garlic
Preparation:
Heat the oil in a big pot, and then add the flour. Stir until it is a paste. Add the water gradually, whisking it into the flour paste. Add the chicken broth, chipotle chili, 1 tablespoon of adobo sauce and the chili powder and bring the mixture to a boil. Add more chili powder or adobo if required. If the mixture is too spicy, add some more chicken broth and water. Boil this sauce for 5 minutes, then turn the heat down and simmer.
Add the onions, bell pepper, and garlic to a skillet and sauté until soft. Add the beef and cook until browned. Sprinkle some chili powder into the mixture if you like.
Take the browned beef off the heat and drain off the fat.
Preheat the oven to 350 degrees F.
Take the sauce off the heat and pour some of it into a big baking dish to cover the bottom. Divide the meat mixture between the tortillas and wrap them up.
Place the enchiladas seam side down in the pan.
If you have some of the meat mixture left over, you can pour it over the enchiladas. Pour the rest of the sauce over the enchiladas, leaving a quarter inch clear at the top of the pan.
Sprinkle the cheddar cheese over the top and cover the pan loosely with aluminum foil.
Bake the enchiladas for 15 minutes, then remove the foil and bake for 5 minutes more.
Let the enchiladas cool for 5 minutes, and then serve.
