Quick and Easy Chicken Mexican Casseroles

It really is that easy. Chicken Mexican casserole is quick and simple to prepare and better yet, tasty enough that it may well become a regular part of your repertoire.

This recipe blends chicken, onion, garlic, cheese and a few more ingredients to make one of the most quick and easy chicken Mexican casseroles ever. You need to cook the chicken and then bake it with the remaining ingredients. This is one of the best easy chicken Mexican casseroles for a busy weeknight or for whenever you do not want to spend ages cooking.

Quick And Easy Chicken Recipe: Mexican Casserole-Style

Ingredients -

4 boneless, skinless chicken breasts
2 cloves garlic, crushed
1 small white or yellow onion, minced
1 cup salsa
1 cup sharp cheddar or Monterey Jack cheese, shredded
½ tsp cumin
½ tsp oregano
1 tsp olive or vegetable oil
Salt and black pepper, to taste

Preparation:

Preheat your oven to 400 degrees and heat oil in a skillet.

If you have a cast iron skillet, you can make the entire dish in this one pan.

Rub the chicken breasts with garlic and spices and cook until lightly browned, 6-8 minutes per side.

If you are using a cast iron skillet, simply leave the chicken where it is and pour salsa on top, followed by the shredded cheese.

Otherwise, transfer to a 9" glass baking dish first.

Bake for 20 minutes or until cheese is slightly browned and bubbly.

Serve hot with rice; the baking time for this Mexican casserole recipe is perfect for cooking up a batch!
