Ingredients -
8 tostada shells
1 can (15 oz) refried beans
1 ¼ pounds flank steak, grilled
1 yellow onion, diced
1-2 jalapenos, diced
¼ cup cilantro, chopped
1 cup romaine or iceberg lettuce, shredded
1 large tomato, diced
Salsa, lime wedges and sliced radish, for serving
Sour cream and shredded Monterey Jack cheese for serving (optional)
Preparation:
Grill the flank steak first, after marinating and seasoning it to your liking. If it needs any additional seasoning, add a little salt and pepper, and then cut into thin strips. Heat the refried beans. Top each tostada shell with refried beans, steak, and vegetables. Add sour cream and/or Monterey Jack, if desired and serve with salsa, lime wedges, and slices of radish.
Who can resist perfectly grilled flank or skirt steak in tostada form? Not many, to be sure - and since the steak has such a great flavor, they really do not need much in the way of seasoning. A little salsa and a squeeze of lime juice and you are ready to go. In Mexico, sliced radishes are a traditional garnish along with tostadas and tacos and they actually do go quite well together, so consider trying this as well. Especially in the summer when they are in season, they really are a treat; as if these perfect grilled steak tostadas were not enough on their own.
