We all know that we need to eat healthier. More fruits and vegetables and of course, more whole grains as well. While you'll still need to eat your vegetables, there is one exceptionally easy way to add more whole grains into your diet - by eating more Mexican food.
More to the point, you can get more whole grains by eating more homemade Mexican food, starting with your own homemade tortillas. While you can of course buy whole wheat tortillas easily enough at just about any grocery store, this whole wheat tortilla recipe is easy to make and costs a lot less than buying premade tortillas at a store.
This is a very basic tortilla recipe which you can feel free to make adjustments to as you see fit. Depending on your level of culinary skill and your interest in experimenting with this recipe, you can always try different grains and different ratios of whole wheat to all purpose flour in order to find the right balance of whole grain nutrition and flavor for your palate.
Ingredients -
1 cup all-purpose flour
4 cups whole wheat bread flour
½ cup shortening
2 teaspoons salt
1 ½ cups boiling water
all-purpose flour for rolling
Preparation:
Mix the dry ingredients in a large bowl and cut in the shortening using a pastry cutter or a fork. Once the mixture takes on the appearance of medium sized bread crumbs, it's time to start adding the boiling water, just a few tablespoons at a time until the mixture becomes soft dough; if it's a little sticky, just add a little more flour. Turn the dough onto a clean, floured surface and knead for about five minutes until the dough becomes smooth and elastic. Separate the dough into 12 equal sized balls and allow to rest for fifteen minutes.
Heat a cast iron skillet or griddle over medium-high heat while you roll out the tortillas thinly using a rolling pin or tortilla press. Flour each ball before flattening to prevent sticking. Cook each tortilla for about 20-30 seconds per side, or until they brown in spots and puff up slightly. Keep the tortillas in a clean towel until the entire batch is finished and serve hot.
