One of the Best Vegetarian Sandwich Wraps

What cannot you fold up in a tortilla? From burritos to fajitas, tacos to all kinds of wrap creations, a tortilla makes a terrific basis for just about any kind of sandwich you can think of -even decidedly non-Mexican ingredients like peanut butter and jelly taste great wrapped up in a flour tortilla (if not so much in a corn tortilla).

The only limit to creating dishes with tortillas and the ingredients of your choice is your imagination. You can use meats, cheeses or as is the case in this recipe, vegetables as the main ingredient in your tortilla filling. This is a healthy, great tasting way to enjoy your vegetables (and your tortilla) at the same time. Think of it as having your cake and eating it too, in a manner of speaking.

This quick and easy vegetarian tortilla wrap recipe is easy to make, easy to pack up for a weekday lunch and fast enough to prepare that you can make a quick weeknight dinner of it when you want something home cooked, but don't want to spend more than 15 minutes in the kitchen before you unwind from a busy day. Really, this is a recipe which is equally good for any occasion though and it is well worth making even when you have plenty of time to spare.

Tortilla Wrap With Corn and Vegetables

Ingredients -

4 fajita-size flour tortillas (whole wheat is best, but any flour tortillas are fine)
½ cup corn kernels, fresh or frozen
1 small red onion, diced
1-2 jalapeno peppers, sliced (remove seeds and ribs for milder flavor)
1 zucchini, diced
1 yellow or red bell pepper, diced finely
Salsa (your choice)
Sour cream (optional)
Salt and black pepper, to taste
Olive or vegetable oil for sautéing

Preparation:

You can make these tortilla wraps in a matter of minutes.

Chop the vegetables and sauté over medium heat until heated through and slightly softened (but not overcooked) and season with salt and black pepper.

Portion the vegetable mixture into the tortillas (warm them up first to make them easier to handle), top with salsa, sour cream, if using, fold up and serve.
