Hot Beef Tortilla Recipe with Bell Peppers Fajita Style

There are so many different tortilla recipes, including hot ones such as the following beef and bell pepper tortilla. This beef tortilla recipe is similar to a fajita, in that it contains beef and bell peppers, but fajitas tend to be assembled at the table and this one is made in its entirety and served that way. If you are looking for a hot tortilla recipe, this one is very tasty.

The sirloin steak is cut into strips and stir fried with the onions and bell pepper. The lime juice, cumin, cilantro, chili sauce, and salsa add plenty of authentic Mexican flavor to this roll up tortilla sandwiches recipe. Maybe you have made a Mexican or Spanish tortilla recipe before, or it could be that you are new to using tortillas instead of bread. In either case, you will find them very simple to work with.

If your tortilla package has been open for a day or two and the tortilla will not bend without breaking, moisten them with a few drops of water and microwave them for about fifteen seconds. Alternatively, you can warm them up in a dry skillet on each side. Warming them up is a good idea anyway if you are making hot tortilla recipes because a hot tortilla helps to keep the filling hot too. You can warm them up in the oven, of course, if you already have it hot for another purpose.

1 lb beef sirloin steak, no bones
˝ teaspoon ground cumin
2 tablespoons lime juice
˝ red bell pepper, in strips
˝ yellow bell pepper, in strips
˝ green bell pepper, in strips
1 onion, in strips
2 tablespoons vegetable oil
2 tablespoons chili sauce
1 cup tomato salsa
2 tablespoons chopped fresh cilantro, plus extra for garnish
6 flour tortillas
Balsamic vinegar for drizzling, (optional)

Preparation:

Cut the steak into 2 inch strips, cutting with the grain. Cut these strips across the grain into slices ⅛ inch thick.

Sauté the beef strips in the skillet for about 5 minutes or until it is not pink any more.

Stir in the chili sauce, lime juice, cumin, and salsa.

Cook for a few minutes until everything is hot, and then stir in the cilantro.

Divide the hot beef mixture between the tortilla wraps and roll them up.

Drizzle some balsamic vinegar zigzags over the tortillas if you like.
