Mouthwatering Slow Cooker Burrito Recipes

Slow cooker burrito recipes are popular because this cooking method makes the burrito filling extra tender and succulent. The following burrito recipe uses London broil, but what is London broil exactly? This cut of steak is made by broiling or grilling marinated round steak or flank and then cutting it into thin strips against the grain. Interestingly enough, this food is not known in London, England, and nobody really knows where the name came from. London broil does not have to be a specific cut of steak, although flank steak is usually used for it, as well as top round roast. This meat needs to be pounded, marinated, or slow cooked to make it tender, because of the muscle fibers, which run down the length of these cuts.

You can also make slow cooker burrito recipes with chicken, pork or another meat but using London broil gives a particularly flavorsome result and the refried beans, corn, Monterey Jack cheese, tomatoes, cilantro and other tasty ingredients all help to make these crockpot burritos extra delicious.

Crockpot London Broil Burritos

Ingredients -

2 lbs London broil
15 oz refried beans
1 chopped onion
1 package taco seasoning mix
4 oz chopped green chilies
1 tablespoon white vinegar
¾ cup sour cream
1 ½ cups shredded Monterey Jack cheese
¼ cup chopped cilantro
14 oz can corn kernels, drained
12 flour tortillas, 8 inches across
1 ½ cups chopped plum tomatoes
Cooking spray, as needed

Preparation:

Spray the inside of the crockpot with cooking spray.

Trim the fat off the beef, and then rub the taco seasoning all over it.

Add it to the crockpot with the vinegar, green chilies, and onion.

Cover and cook on low for 9 hours.

Take the meat out of the slow cooker and shred it with a pair of forks.

Mix the meat with the cooking liquid.

Warm the corn, beans, and tortillas, as per the instructions on the packages.

Spread 2 tablespoons of beans down the middle of each tortilla, then spoon a ⅓ cup of the beef on top.

Top the beef with the corn, 2 tablespoons of cheese, 2 tablespoons of tomatoes and a tablespoon of sour cream.

Sprinkle the cilantro over the top and roll the burritos up.
