Red Bell Pepper Burritos with Kidney Beans and Garlic

If you are looking for a vegetarian Mexican burritos recipe or you just fancy something meat-free, how about trying this delicious vegetarian Mexican recipe? The red peppers, kidney beans, and cheese combine well for a tasty and healthy burrito. These burritos do not take long to prepare or cook and they are served hot from the oven with a selection of garnishes and sauces.

Meat is not essential to make Mexican food and even though you might be more used to the typical chicken and beef based fare in Mexican fast food joints, homemade Mexican food is more about using traditional Mexican recipes to rediscover authentic Mexican flavor combinations. Vegetable recipes and seafood recipes are very popular in Mexico as well.

Red bell peppers are ideal for this Mexican burritos recipe since yellow peppers can be too sweet and green peppers are not quite sweet enough. Like with a lot of authentic Mexican food recipes, the spices and herbs are carefully chosen, to result in a gorgeous taste with every bite.

How to Make Vegetarian Mexican Burritos

Ingredients -

1 clove garlic, minced
2 teaspoons olive oil
1 tablespoon mild chili peppers, chopped
¼ teaspoon dried oregano
½ teaspoon cumin
1 ½ cups canned kidney beans, drained, rinsed and mashed
1 onion, minced
8 flour tortillas
½ cup red peppers, chopped
½ cup shredded Monterey Jack cheese
Shredded lettuce, chopped tomatoes, hot pepper sauce, salsa, and sour cream, to serve

Preparation:

Preheat the oven to 325 degrees F.

Heat the oil in a skillet and add the garlic and onions.

Cook them for 5 minutes, and then add the red peppers and cook for another 7 minutes, or until everything is tender.

Add the cumin, oregano, chilies, and beans and warm through.

Put a tortilla in a heavy skillet over a medium heat and cook it, turning it often.

Spread 4 tablespoons of the filling down the middle and sprinkle a tablespoon of cheese over the top.

Roll the tortilla up and put it in a baking dish, seam side down.

Repeat with the other tortillas and the rest of the filling.

Bake for 15 minutes and serve them with the lettuce, tomatoes, salsa, hot pepper sauce, and sour cream.
