Easy Chicken Burritos with a Barbecue Sauce

These chicken burritos vary from some other chicken burritos recipes, due to the fact that they are flavored with barbecue sauce. The Mexican cheese, jalapenos and lime gives these burritos a Mexican flavor but the barbecue sauce adds a little extra taste to these chicken burritos and you will love the way the sauce brings out the chicken flavor. Use any kind of barbecue sauce you happen to have. A spicy barbecue sauce would be good, as would a smoky one.

The onion and bell pepper adds crunch and if you are watching your calories chicken burritos are not a fattening dish. Leave out the cheese if you want, or substitute a low fat cheese instead. Also, when cooking chicken for burritos or sautéing the filled, rolled up burritos, you can use cooking spray if you are watching your weight. Do not worry - the end result will be pretty much identical.

These easy chicken burritos make a nice snack or a great dinner. Serve them with refried beans and rice, or with French fries and a salad on the side for a complete meal. This dish appeals as much to kids as it does to adults, since these chicken burritos are not overly spicy. They are not spicy at all, in fact, so if you do want to add some chili powder or sliced jalapenos to the mixture, you can.

BBQ Style Chicken Burritos

Ingredients -

1 ½ cups julienned green bell pepper
½ lb boneless, skinless chicken breast, in ½ inch cubes
6 oz shredded Mexican cheese blend
4 warmed flour tortillas, 10 inches across
½ cup barbecue sauce
4 tablespoons canola oil
1 chopped onion
Shredded lettuce, lime wedges, sliced jalapenos and sour cream, for garnish (optional)

Preparation:

Sauté the chicken with the onion and bell pepper in a skillet in half the canola oil for about 7 minutes, or until the chicken is cooked through.

Add the barbecue sauce and bring the mixture to a boil.

Turn down the heat and simmer for a minute or 2, or until everything is heated through.

Sprinkle the cheese down the middle of the tortillas, and then add the chicken mixture.

Roll the tortillas up, around the filling.

Brown the burritos all over in the rest of the canola oil in the skillet.

Serve them with the suggested shredded lettuce, lime wedges, sliced jalapenos and sour cream, or with your choice of garnish.
